Cooking Easy Mexican Vegetarian

Veggie, Gluten-free, Nut-free Family-friendly Mexican Fiesta

I’m loving exploring new cuisines. Recently I was a bit stumped for ideas when I was planning a free-from vegetarian family dinner party, but this worked really well:

Nibbles

  • Lentil crisps with salsa, sour cream and chive dip
  • Chopped fruit and veg
  • Corn tortilla chips

Mains

  • Gluten-free corn taco shells, heated and served with choice of:
    – creamy guacamole (avocado, lemon, spices)
    – fresh salsa (tomato, onion, lemon, chilli, red capsicum)
    – chopped lettuce
    – grated cheese
    sweetcorn
    – chopped tomato (plain)
    sour cream
    mixed beans (2 x tins) simmered slowly in caramelised onion, with taco spice
  • Fluffy rice (half-spiced and half plain, for less adventurous kids)

Dessert

  • fresh chopped seasonal fruit
  • ice cream (check labels for nut-free and gluten-free)
