Veggie, Gluten-free, Nut-free Family-friendly Mexican Fiesta
I’m loving exploring new cuisines. Recently I was a bit stumped for ideas when I was planning a free-from vegetarian family dinner party, but this worked really well:
Nibbles
- Lentil crisps with salsa, sour cream and chive dip
- Chopped fruit and veg
- Corn tortilla chips
Mains
- Gluten-free corn taco shells, heated and served with choice of:
– creamy guacamole (avocado, lemon, spices)
– fresh salsa (tomato, onion, lemon, chilli, red capsicum)
– chopped lettuce
– grated cheese
– sweetcorn
– chopped tomato (plain)
– sour cream
– mixed beans (2 x tins) simmered slowly in caramelised onion, with taco spice - Fluffy rice (half-spiced and half plain, for less adventurous kids)
Dessert
- fresh chopped seasonal fruit
- ice cream (check labels for nut-free and gluten-free)
