Cheese Muffins

Makes: 12 small muffins

Time to make: 20 mins (10 prep + 10 bake)

Whether you are having brunch, afternoon snack or midnight cravings, these are delicious, quick and easy to make. My mother used to make these for us and we still cook them in our home at least once every few weeks. The kids love them and will benefit from the protein (and any veg you add). I also have a vegan version.

Enjoy! You can add spinach, parsley, anything you like to make them your own, or keep them classic and cheesy.

– 1 cup plain flour
– 2 tsp baking powder
– 1 pinch paprika
– 60g butter
– 1 egg
– 1 cup milk
– 1 ½ cups grated cheddar cheese
1. Heat oven to 450°F / 230°C

2. Sift the flour, baking powder, paprika *

3. Rub in the butter well

4. Add the cheese to the dry mixture **

5. Beat the egg and milk together in a cup

6. Mix everything together with a fork

7. Put spoonfuls into greased / lined patty-pans

8. Bake at 450°F or 230°C for about 10 mins

* You can also use self-raising flour instead of plain flour, adding just ½ tsp baking powder

* Jazz it up with a bit of spinach, feta or bacon – just mix into the batter before spooning into the muffin trays

** For variety you can separate some mixture out before adding the cheese and add a dash of cinnamon and sugar to that. Or add spinach and other veg/herbs with the cheese for savoury variety.

Prep ingredients and equipment (pot/bowl works just as well for mixing the batter)
Add the butter to the dry ingredients and rub it in thoroughly with your fingers
Fill the greased patty pan trays using 2 spoons
